Going Vegan with Elwin & Co. Bakery
Elwin & Co. Bakery in Berkley has a new line of vegan baked goods, and Chef and Owner Elwin Greenwald stopped by the Fox2 Kitchen Saturday morning to show it off, which also sharing some of his favorite vegan recipes and other delicious creations.

Strawberry Shortcake with Fresh Michigan Berries and Sweetened Sour Cream
Ingredients
- 12 medium size Elwin’s Lemon Poppy Seed Scones Wire whisk
- 1⁄4 TSP Kosher salt Rubber spatula
- 1 pint sour cream Assorted mixing bowls
- 1 quart sliced fresh strawberries Fine mesh strainer or sifter
- 1 pint each fresh blueberries, blackberries Lemon zester or grater
- Juice and zest of 1 lemon Serrated knife
- 1⁄2 C orange marmalade Measuring cups & spoons
- 1⁄2 C fresh squeezed orange juice Decorative plates
- 1⁄4 TSP pure vanilla
- orange liqueur if desired
- 1⁄2 C granulated sugar
- Confectioners sugar or cinnamon for dusting
- Sprig of fresh mint
- Confectioners sugar or cinnamon for dusting
Method
1) In a mixing bowl combine the orange marmalade, lemon juice and zest, orange
juice, orange liqueur and set aside.
2) In another mixing bowl whisk together the sour cream, sugar, vanilla and kosher salt
and set aside.
3) Using the serrated knife slice the scones in half. Place the bottom part on the
serving plate. Spoon some of the marmalade mixture over the scone. Gently
mound the berries over the scone bottom. Place the top half of the scone over the
berries and dollop the sweetened sour cream over.
4) Garnish with fresh mint and dust with confectioners sugar or cinnamon.
