Maryland Crab Cake
Ingredients
1 ea. 4 oz. crab cake from any crab cake mix recipe
1/2 oz. Griddle butter
1 Tbs. Rouille
1 Tbs. Red bell pepper sauce
1/4 tsp. Red Bell peppers, minced
Assembly
Brush 1/2 Tbs. butter on a sizzle pan, place crab cake on the platter then brush 1/2 tbs. on top of the crab cake.
Place in 450-degree oven for 4-5 minutes, remove and continue cooking under broiler until golden and internal temperature is 165 degress (appx. 3-4 minutes).
NOTE: If your kitchen does not have both a broiler, cook in oven to internal temperature of 165 degrees (6-8 min).
To plate
Using a spoon, place the red bell pepper sauce at 9:00 and pull the sauce towards 12:00.
Place the rouille at 3:00 and pull the sauce towards 6:00.
Place the crab cake in the center of the place.
Sprinkle the minced peppers over the crab cake.
