(WJBK) - The Community House in Birmingham is holding a cooking class next week that is all about the strawberries. Celebrate the bounty of Michigan's strawberry harvest with brown butter biscuits and macerated strawberries, strawberry-chipotle glazed pork loin, jicama slaw with lemon-strawberry vinaigrette and more.
The class will be held by Chef Graham Schave. He also joined us in the FOX 2 Cooking School to give us a sneak peek at one of the recipes. You can find it below.

STRAWBERRY & JICAMA SALAD WITH STRAWBERRY-LEMON VINAIGRETTE
Ingredients for the salad
2 cups strawberries, sliced thin
1 medium jicama, peeled and sliced thin
1 medium english cucumber, peeled and sliced
1 medium avocado, cleaned and cubed
1 medium mango, peeled and sliced
6 ounces mixed greens of choice
Strawberry Lemon Vinaigrette
2 tablespoons extra virgin olive oil
1 tablespoon lemon juice
1 tablespoon golden balsamic vinegar
5 whole strawberries, stems/tops removed
1/8 teaspoon fine sea salt
Freshly ground black pepper to taste
Cooking Instructions
Prepare the salad dressing by combining the olive oil, vinegar, lemon juice, strawberries, salt and pepper in a blender, and blend on high until smooth. Set aside, or store in refrigerator until ready to use.
Prepare fruits and vegetables by cleaning and peeling where appropriate. Slice into various bite sized pieces. Toss with reserved mixed greens and vinaigrette before enjoying.
